Overview

The position of Sous Chef reports into the Head Chef. You are responsible for assisting with short- and long-term planning and managing the day-to-day operations of the food and beverage operations. You will assist with planning and coordination of special events, promoting food and beverage products, setting and maintaining culinary standards, achieving sales goals, and ensuring accurate inventory controls.

Operations and Processes


· Adhere to and enforce all food safety health and safety policies and procedures

· Liaise between BOH team and FOH Leads to ensure smooth communication and workflow

· Assist in the supervising, coordinating and management of the culinary team and to ensure smooth day to day operations in all areas of food service

· Assume responsibilities and decisions in the absence of the Head Chef

· Oversee the daily operations of the department during working hours

· Participate in operational meetings when required

· All other duties as required


Inventory and Suppliers

Ensure we have enough stock on hand

· Input and submit weekly food orders to supplies

· Monitor of inventory levels, food cost controls and cost of labour, providing recommendations to the Head Chef


SOPs and Menu Development

· Assist with updating recipe books and standardize prep for everyone

· Collaborate with the Head Chef in creating unique, healthy and flavorful menu items with an emphasis on using sustainable and local ingredients while paying homage to the Finnish Culture

· Assist with the development of seasonal menus


Guest Experience

· Work with the Head Chef to respond to food-related feedback and ensure proper processes are implemented

· Interact with the general community, guests, employees and government officials with tact and courtesy.


Leadership and Staff

· Provide leadership, direction, and oversight for the back of house

· Coach and mentor staff

· Work with the Head Chef and agree on scheduling suggestions and hiring recommendations

· Provide hands on support to the team

· Assist with interviews of staff, as required

  • Onboard and train new hires
  • Participate in providing feedback in performance reviews
  • Identify training and development gaps within the team and make recommendations to the Head Chef and Human Resources
  • Ensuring staff are operating at an acceptable standard; discipline as required
  • Create a positive work environment where back of the house staff are inspired to learn, grow, and contribute to the success of the team.
  • Solve problems or issues that may arise in the kitchen.


WHAT WILL MAKE YOU SUCCESSFUL

  • Minimum 3-5 years Supervisory experience in the culinary industry
  • Culinary training, Red Seal Certificate, or equivalent
  • Knowledge in dietary restrictions and food preferences such as plant based, vegetarian and gluten free
  • Exceptional organizational skills
  • Able to make sound, independent decisions
  • Required to work a rotating schedule including weekends, evenings, and holidays
  • Food Handlers Certificate
  • Experience in working in a fast-paced fine dining environment
  • Work well under pressure
  • First Aid and CPR certificate an asset

YOUR WORKING CONDITIONS

· Able to work in a fast-paced environment

· Comfortable walking, standing, and bending over an 8-hour period

· Work in an environment with minimal temperature control

· Able to lift max of 50 lbs.
