The Mississaugua Golf and Country Club (“The Club”) is one of Canada’s top private all-season golf clubs, with a diverse membership of 1,400 members and an outstanding Tier One golf course famous for its excellence. The Club has played host to numerous premier events, including six Canadian Opens.

Founded in 1906, MG&CC is a year-round private club that offers golf, fitness, curling and tennis, dining and social amenities. Our Tudor style Clubhouse is a spectacular venue for casual and fine dining, banquets, weddings and various social events and functions.

Position Summary

Mississaugua Golf and Country Club is seeking a skilled and creative Sous Chef to join our dynamic team. Responsible for playing a key role in the daily operations of Terrace Room kitchen, and providing leadership and direction to the kitchen team, in the absence of the Executive Chef. Ensures that all recipes, food preparation, and presentation meet the Club’s high standards/specifications and commitment to quality, maintains a productive, safe and sanitized kitchen.


Key Responsibilities

o Responsible for kitchen operations in the absence of the Executive Chef, including supervision of cooks and dishwashers

o Act in an advisory capacity to the Executive Chef

o Prepare cold and hot meals including menu items and banquet/event orders for restaurant, event/function and banquet dining

o Cook in various locations within the Club, as per event schedules – main kitchen, Terrace Room, banquet halls/Tudor Room

o Assess stations that need additional support and provide any assistance as required

o Provide input on menu design and content, including daily specials

o Organize work stations and train staff to ensure maximum productivity and efficiency

o Control food costs by following proper storage procedures, standardized recipes and waste control procedures

o Assist with inventory – ensure it is adequately maintained and purchases are made in a cost-effective manner

o Ensure quality and recipe adherence by testing portions, garnishes, temperature, taste and appearance of food

o Oversee sanitation and hygiene in all kitchen work areas and related equipment. Conduct thorough inspections on a regular basis

o Maintain the cleanliness and organization of the kitchen area, freezer/fridges, kitchen equipment, counters and storage areas

o Follow all Health & Safety policies and procedures and sanitation standards


Requirements

o 5+ years with experience in each culinary area

o Professional culinary training is an asset

o People management skills with experience training and supervising team members

o Red Seal Certification, Food Safe Certification

o Experience in a fast-paced, upscale restaurant and private Clubs highly preferred

o Banquet experience is an asset

o Strong leadership with the ability to delegate, establish work priorities, train and motivate employees

o Working knowledge and training on all health & safety standards and sanitation standards i.e. Food Safe, WHMIS, Health and Safety Policies, food-handling techniques

o Highly organized with a strong focus and commitment to quality

o Contribute to a positive work environment and demonstrate a positive attitude

o Excellent culinary tastes and artistic flair for creating unique recipes and appealing dish presentation

o Work in an efficient manner while managing multiple tasks and priorities

o Consultative skills for identifying and communicating continuous improvement opportunities

o Flexibility to adapt to changing demands

o Excellent communication and interpersonal skills

o Ability to build and maintain excellent relationships with diverse people, including kitchen and dining staff

o Ability to respond quickly to issues and make effective decisions under pressure
