Position Available: Jr. Sous Chef
The Mississaugua Golf and Country Club is one of Canada’s top private all-season golf clubs, with a diverse membership of 1,400 members and an outstanding Tier One golf course famous for its excellence. The Club has played host to numerous premier events, including six Canadian Opens.
Founded in 1906, MG&CC is a year-round private club that offers golf, curling and tennis, dining and social amenities. Our Tudor Clubhouse is a spectacular venue for casual and fine dining, banquets, weddings and various social events and functions.
Mississaugua Golf and Country Club is seeking a talented Jr. Sous Chef who will play a key role in the daily operations of the kitchen, in the absence of the Executive Chef and Executive Sous Chef. Ensures that all recipes, food preparation, and presentation meet MG&CC’s high standards/specifications and commitment to quality. Maintains a productive, safe and sanitized kitchen. The junior Sous Chef is also responsible for ensuring the a la carte line is stocked for service,
o Assisting in day to day operation of kitchen in the absence of the Executive Chef or Executive Sous Chef and Sous Chef, including support and guidance to cooks and dishwashers
o Act in an advisory capacity to the Executive Chef and Sous Chef
o Prepare cold and hot meals including menu items and banquet/event orders for restaurant, event/function and banquet dining
o Cook in all stations within the Club, as per event schedules – main kitchen, Terrace Room, banquet halls/Tudor Room
o Assess stations that need additional support and communicate with the Executive Chef or Sous Chefs any assistance required
o Provide input and feedback on menu design and content, including daily specials
o Organize work stations and coach staff to ensure maximum productivity and efficiency
o Control food costs by following proper storage procedures, standardized recipes and waste control procedures
o Assist with inventory – ensure it is adequately maintained and purchases are made in a cost-effective manner
o Ensure quality and recipe adherence by testing portions, garnishes, temperature, taste and appearance of food
o Maintain the cleanliness and organization of the kitchen area, freezer/fridges, kitchen equipment, counters and storage areas
o Follow all Health & Safety policies and procedures and sanitation standards
o 1-2 years’ experience as a 1st cook or Junior Sous Chef
o 4 Years’ experience in a culinary environment as a cook
o Professional culinary training, Red Seal Certification
o Coaching skills with experience training and supervising team members
o Food Safe Certification
o Experience in a fast-paced, upscale restaurant,
o Banquet experience is an asset
o Must be able to lift up to 50 lbs
o Strong work ethic, ability to establish work priorities, train and motivate coworkers
o Working knowledge and training on all health & safety standards and sanitation standards ie. Food Safe, WHMIS, Health and Safety Policies, food-handling techniques
o Highly organized with a strong focus and commitment to quality
o Contribute to a positive work environment and demonstrate a positive attitude
o Excellent culinary tastes and artistic flair for creating unique recipes and appealing dish presentation
o Work in an efficient manner while managing multiple tasks and priorities
o Consultative skills for identifying and communicating continuous improvement opportunities
o Flexibility to adapt to changing demands
o Excellent communication, interpersonal and problem-solving skills
o Ability to build and maintain excellent relationships with diverse people, including kitchen and dining staff
o Ability to respond quickly to issues and make effective decisions under pressure
