Position Available: Executive Chef

Mississaugua Golf & Country Club (MGCC), one of Canada’s premier private all-season golf clubs, is seeking an Executive Chef.

One of Canada’s oldest and most storied golf clubs, MGCC has embraced change over the years to meet members’ evolving needs and expectations, and to attract new members. Founded in 1906, MG&CC is a year-round private club that offers golf, curling, fitness and tennis, dining and social amenities. Our Tudor Clubhouse is a spectacular venue for casual and fine dining, banquets, weddings and various social events and functions. We are committed to remaining true to our traditional values while continuously evolving to stay current within the changing private club market.

Position Summary

This position reports to the Clubhouse Manager and is responsible for leading the culinary operations of the Club. This role is accountable for planning and overseeing the preparation of all meals, as well as performing administrative, financial, and people management responsibilities.

Key Responsibilities

Culinary Operations

o Oversee all culinary operations encompassing a large main kitchen, satellite a la carte kitchen, and on-course quick service facility

o Develop a high-quality kitchen team by effectively recruiting, training, scheduling, coaching, managing performance, and motivating employees in an effort to ensure high levels of employee productivity and satisfaction

o Enthusiastically promote creative culinary offerings and excellence in every member and guest experience

o Lead the Sous Chefs in the design of the a la carte and event menus as well as engineer, develop and document recipes, including related plate presentations

o Ensure food quality and presentation is consistently outstanding – from standard country club fare to special culinary dinners, banquets and large events

People Management

o Provide ongoing coaching and counseling, both informally and formally to assess the process of development of staff and their objectives; create customized coaching strategies as required

o Work closely with Human Resources to ensure programs, policies and procedures are in place for the following areas: legal compliance, recruitment and selection, training and development and employee performance management

o Work to maintain a positive relationship with the Front of House (FOH) team and ensure this philosophy is consistent with all Back of House (BOH) team members

Financial Planning / Fiscal Management

o Directly responsible for the financial planning and fiscal management of all culinary operations

o In collaboration with the Clubhouse Manager develop the budget; follow through with monitoring and controlling the budget to meet the departmental objectives and maximize overall profitability

o Demonstrate a strict commitment to minimizing costs without compromising quality

o Create capital requirements budget ensuring continued modernization of all food

o Work with relevant stakeholders to source required products and equipment for all relevant capital projects

Strategic Planning

o Work with the senior members of the culinary team and the Clubhouse Manager to develop new food concepts that are consistent with current food trends.

o Participate in the development of thematic promotions in conjunction with holidays or events

o Work with the Sous Chefs to develop long term menu direction to allow for focused training

Member and Guest Focus

o Handle member complaints tactfully to maintain good public relations image and maintain a running log for records

o Respond to all employee and member inquiries, complaints, and issues with a sense of urgency

o Exercise timely two-way communication with all employees’ other departments

Professional Qualifications

o Minimum 8 years of diversified culinary management experience in high-end dining and banquet facilities

o Private member club experience is an asset

o Red Seal and Food Handling Certifications are required

o Previous experience as an Executive Chef preferred

o Experience managing, analyzing and reporting financial performance

o Versatility to execute casual and fine dining experiences concurrently

o Strong people management experience, with an ability to influence and inspire required

o Managing multiple priorities in a fast-paced and time sensitive environment

o Consistent attention to detail
